This wine is made from grapes of Carricante, the most typical autoctonous white variety of the Etna volcano. The grapes are hand picked in October from vines located on the east and south slopes of the mountain. Fermentation occurs in a steel vat, with the aid of an autoctonous yeast selected after a long experimentation, and the wine then matures exclusively in steel.
